French Racked
Our American French rack is also known as the prime rib of lamb, packing a mellow flavor with lots of marbling. Grass-fed and pasture-raised in Colorado, our lambs are treated with a high standard of humane care under the global animal partnership. A lamb rack consists of 7 or 8 bones and the term “frenched” refers to how the butcher cuts the meat and exposes the rib bones down to the eye of the rib.
